Here’s what you will need:
1 English cucumber, 4 Roma Tomatoes, 3 Ripe Avocados,
1/2 Red Onion, 1/4 cup Cilantro or parsley, Juice of 1 Lemon
Salt and black pepper to taste
2 Tbsp. extra virgin olive oil
Directions:
1. Place sliced cucumber, tomatoes, avocados, onion, and cilantro in a large salad bowl.
2. Toss with olive oil, lemon juice, salt, and pepper.
Creamy Broccoli salad

Serves: 4-6 servings
Ingredients
- 1 lb. fresh broccoli, cut into bite sized pieces
- 1 lb. bacon, cooked and crumbled
- 1 small red onion, diced finely
- ½ cup dried cranberries
- ¾ cup sunflower seed kernels
- 1 cup light mayonnaise
½ cup sugar
- 2 tsp. white vinegar
Instructions
- Toss broccoli with bacon, onion, cranberries and sunflower kernels.
- Whisk together mayo, sugar and vinegar. Toss dressing in with broccoli salad an hour or two before serving. Refrigerate until ready to serve. Stir before serving. Enjoy!
CRAYFISH SALAD
SERVES 2

Ingredients
- 1 tablespoons orange juice
- 1 tablespoon fresh lime juice
- 2 teaspoons of honey
- red chilli
- 2 teaspoons of olive oil
- 1/4 red onion or some spring onions
- 125g crayfish
- 1 large mango, peeled, pitted, sliced
- 1 large avocado, halved, pitted, peeled, sliced
- lettuce leaves
Method
Combine first 5 ingredients in a bowl and whisk in oil. Season with salt and pepper then mix in onion and leave to marinate for 15 minutes.
Form a bowl with little gem lettuce on a plate and add any other salad leaves you have. Place avocado, mango and crayfish on top and drizzle over the dressing.
